Cookie Ice cream sandwiches by @daly_foodie


Super indulgent and oh-so-sweet these ice cream sandwiches make the perfect dessert or tasty treat.


Preparation : 30 MINS (15 MINS CHILL)

Cooking : 10 MINS


  • 150g soft butter
  • 1 large egg
  • 150g brown sugar
  • 1tsp vanilla extract
  • 190g plain flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 150g dark cooking chocolate, cut into chunks
  • 1 tub Mullin's mallowy chocolate chunks


  1. Mix the butter and sugar together until fluffy then add in the egg and vanilla extract.
  2. Gently fold in the flour, baking powder, salt and chocolate until all combined.
  3. Leave to chill for 15mins in the fridge then divide into 14 balls on a lined baking sheet.
  4. Cook in a preheated oven at 160c for 10 mins and then leave to cool and harden.
  5. When your cookies are baking scoop your Mullin's ice cream into large balls and then return to the fridge in a lunchbox for firm up.
  6. Build your sandwich by putting the ice cream in between two cookies and enjoy!
